Made with heritage pork that was raised a few miles from our delicatessen (Weston, MO).  Pig's Head is a cold cut terrine made by poaching the pig's head with an assortment of aromatics until very tender, then set into a mold and chilled.  This can then by sliced, eaten on a sandwich, a spread with crackers, or with mustard, pickles, or fruit.
